On this week’s The NOLADrinks Show with Bryan Dias, we welcome celebrity chef Elizabeth Falkner. She is a passionate advocate for reducing food waste in restaurants and at home. We also chat with Evan Weiss of The Bloody Mary Festival that’s making its annual New Orleans stop soon!

NOLADrinks Show – 10-21-19 – Reducing Food Waste with Chef Elizabeth Falkner

We start things off quickly teeing up this week’s show. We jump right into our chat with The Bloody Mary Fest organizer, Evan Weiss. He lets us know about this growing festival taking place at various times and locations around the country. Evan also tells us about the third annual iteration of the festival here in New Orleans coming Saturday and Sunday, November 2nd and 3rd.

Then, we have our featured interview with celebrity chef Elizabeth Falkner. She was recently in New Orleans giving a talk at the Southern Food and Beverage Museum (SoFAB) on reducing food waste. She is an advocate for the issue, and we caught up with her in town to talk about it. This is part of our ongoing “Sustainability Series.”

First up in our chat, we get a bit on Elizabeth’s background as a chef and her culinary journey that included operating spots in both San Francisco and New York. We also talk about her numerous TV appearances and how that has become part of her career, as well.

From there, we get into our main topic – reducing food waste. We discuss the importance of the topic and how food waste, overall, is a not only an economic detriment it is threat to our global environment including contributing to climate change.

Also, we touch on the economic implications and benefits of reducing food waste. Elizabeth shares some ideas on how you can accomplish this at home with some simple steps.

On Another Shot with NOLADrinks, Elizabeth sticks around and we chat about the topic further. This includes more on the importance and approached for reducing food waste in restaurant spaces.

We close things out with our Parting Shot talking about the “dram.” The map below shows the location of Howlin’ Wolf in New Orleans – the location for this year’s Bloody Mary Fest in town.
